Chicken-Chile Rolls

Make-Ahead Chicken-Chile Rolls

6 boneless, skinless chicken breasts
1/4 lb. Monterey Jack cheese, cut into 6 strips
7-oz. jar diced chiles, divided
1/2 c. dry bread crumbs
1/2 c. grated Parmesan cheese
1 T. chili powder
1/2 t. salt
1/4 t. pepper
1/4 t. ground cumin
1/4 c. plus 2 T. butter, melted
2 c. enchilada sauce
Garnish: shredded Mexican-blend
cheese, sour cream, diced
tomatoes, green onions

Flatten chicken breasts to 1/4-inch thin between pieces of wax paper. Top each piece of chicken with one strip of cheese and 2 tablespoons chiles; roll up. Combine bread crumbs, Parmesan cheese and seasonings in a bowl; place melted butter in a separate bowl. Dip chicken rolls in butter and coat in crumb mixture. Arrange chicken rolls in a lightly greased 13"x9" baking pan, seam-side down; drizzle with any remaining butter. Cover and chill overnight. The next day, uncover and bake at 400 degrees for 30 minutes, until heated through. Shortly before serving time, warm enchilada sauce in a saucepan or in the microwave; ladle sauce evenly over chicken. Garnish as desired. Serves 6.

Declutter 101

FlyLady and Kelly

Below is Declutter 101 for those that have never seen it or to refresh your memory:

This is how to De-clutter an area of your home. If you are new to de-cluttering then start with a room that you most see the need. This could be your living room, your dining room or your kitchen. Work on the main living areas of your home first. The rooms that you use the most often that are keeping you in CHAOS. (Can't Have Anyone Over Syndrome)You will need garbage bags, 3 boxes, a timer, magic markers, a feather duster or dust rag, and some extra boxes. Label the boxes Give Away, Throw Away, and Put Away. Line the Throw away box with a trash bag so when it is full you can just scoop it up and toss.

1. Set the timer for 1 hour,30, 15, or 10 minutes , I don't care just as long as you do the job as fast as you can and do not pull out more than you can put a way in that length of time. This means one drawer, one closet or even one shelf in the closet, one magazine rack at a time, under the furniture. Not all of them at once.

2. Start at the entrance to the room. Work your way around the room clockwise. Do not skip an area. What ever happens to be next, just take a deep breath and jump in. Remember to not take out more than you can put away during the timer. BabySteps!

3. With boxes at your feet and dust rag or duster handy. Start with throw away box first and get rid of the things that just need to be thrown out. It is amazing how things just accumulate in a space that your really don't love, use or need that is just plain junk or trash. Don't feel guilty just toss.

4. As you work your way through the trash first you will come across things that don't belong in the room this is where you will make decisions to give away or put away. The put away box is where you will place the things that have a home somewhere else in the house or you will need to create a home for them. The give away box is for the things that you no longer love or use but are still nice and in good shape to give away to a donation center such as Goodwill or Salvation Army. Do not donate items that are not in good enough condition to go into someone else's home. If it is trash toss it!

4. When your garbage box, lined with a garbage bag gets full, close it and take it to where you put your garbage. Don't procrastinate and say that you will get to it later. Recycle what you can. Put in a new garbage bag and keep going until the timer goes off.

5. When the give-away box gets full, take it to the car so that the next time you are out you can donate to your area charity donation center. Do not save for a yard sale. You will be blessed by giving it away. The value can be deducted on your income taxes. Remember you are trying to get rid of clutter. Not relocate it somewhere else in your home. Grab another box, label it and get to work.

6. When the put away box gets full, take the box in your arms and run around the house and put the items in the room where they belong. If they have a place, put them there, if not put them in the room where they logically belong. By the time you have finished you will have a place for everything and everything will be in it's place. You will get there 15 minutes at a time with BabySteps.

7. When the timer goes off, You are required to put away all the boxes, but first you have to empty all of them. As fast as you can.

8. Decide how often you are going to de-clutter a section of this room. Make the commitment to yourself to do a little every day. 15 minutes every day will change your life. Let me warn you; this can become compulsive. Once you get started you will want to clean like a banshee. Don't burn yourself out. Only do small amount at a time. When you set the timer you can only do 2 sessions at a time. Trust us you will get your home de-cluttered this way, 15 minutes at a time!

9. Things to ask yourself as you get rid of your clutter. Do you love the item? Is it garbage? Have I used it in a year? Do I have another one that is better? Does it have sentimental value that causes me to love it? Or does it give you guilt and make you sad when you see the item? Cleanse the rooms of everything that does not make you SMILE.

10. Sing this song. "Please release me let me go" as sung from the stuff point of view. It needs to be loved by someone and if you don't love it. GET RID OF IT!

11. Be proud of your accomplishment! Do not look at the room and see all that you have left to do. Look at the room and see how much you did do. The house did not get messy overnight and it will not get clean overnight. It will happen with BabySteps.

Irish Chicken and Dumplings

Irish Chicken and Dumplings

Ingredients

  • 2 (10.75 ounce) cans condensed cream of chicken soup
  • 3 cups water
  • 1 cup chopped celery
  • 2 onions, quartered
  • 1 teaspoon salt
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon ground black pepper
  • 4 skinless, boneless chicken breast halves
  • 5 carrots, sliced
  • 1 (10 ounce) package frozen green peas
  • 4 potatoes, quartered
  • 3 cups baking mix
  • 1 1/3 cups milk

Directions

  1. In large, heavy pot, combine soup, water, chicken, celery, onion, salt, poultry seasoning, and pepper. Cover and cook over low heat about 1 1/2 hours.
  2. Add potatoes and carrots; cover and cook another 30 minutes.
  3. Remove chicken from pot, shred it, and return to pot. Add peas and cook only 5 minutes longer.
  4. Add dumplings. To make dumplings: Mix baking mix and milk until a soft dough forms. Drop by tablespoonfuls onto BOILING stew. Simmer covered for 10 minutes, then uncover and simmer an additional 10 minutes.

Cinnamon Candy Popcorn

 
Cinnamon Candy Popcorn

8 quarts popped popcorn
1 cup butter
1/2 cup light corn syrup
1 pkg (9 oz) red hot candies

Place popcorn in a large bowl & set aside. In a saucepan, butter, corn syrup & candies; bring to a boil over med-high heat stirring constantly. Boil for 5 minutes minutes stirring occasionally. Pour over popcorn & mix thoroughly. Turn into two greased 15"x10"x1" inch baking pans. Bake at 250F for 1 hour stirring every 15 minutes. Remove from pans & place on wax paper to cool. Break apart; store in air tight containers

Lemonade Sugar Cookies

Lemonade Sugar Cookies

1 cup sugar
1 cup butter
2 eggs
3 cups sifted all-purpose flour
1 teaspoon baking soda
1 can (6 ounces) frozen lemonade concentrate, thawed
extra Sugar (not confectioners)

Cream sugar and butter. Add eggs and beat
until light and fluffy. Sift flour and soda together.

Add alternately with 1/2 cup lemonade concentrate. Drop by teaspoonfuls, 2
inches apart, onto an ungreased baking sheet. Bake in a preheated 400 degree
oven for 8 minutes or until lightly browned edges. Brush hot cookies with
remaining lemonade and sprinkle with sugar. Remove to wire rack to cool.

Yep, I found it at our group and am copy/pasting it.  I will see if I can find
a way to make it a file to our group.

Here is one I found on the web

Ages 2 to 3: Put toys away, fill pet's food dish, put clothes in
hamper, wipe up spills, dust, pile books or magazines, choose clothes
and dress self.

Ages 4 to 5: Above plus, make own bed, empty wastebaskets, bring in
mail or newspaper, clear table, pull weeds, use hand-held vacuum to
pick up crumbs, water flowers, unload utensils from dishwasher, wash
plastic dishes at sink, fix bowl of cereal.

Ages 6 to 7: Above plus, sort laundry, sweep floors, handle personal
hygiene, set and clear table, help make and pack lunch, weed, rake
leaves, keep bedroom tidy, pour own drinks, answer telephone.

Ages 8 to 9: Above plus, load dishwasher, put away groceries, vacuum,
help make dinner, make own snacks, wash table after meals, put away
own laundry, sew buttons, run own bath, make own breakfast, peel
vegetables, cook simple food (such as toast), mop floor, take pet for
a walk, pack own suitcase

Ages 10 and up: Above plus, unload dishwasher, fold laundry, clean
bathroom, wash windows, wash car, cook simple meal with supervision,
iron clothes, do laundry, baby-sit younger siblings (with adult in
the home), mow lawn, clean kitchen, clean oven, change bed, make
cookies or cake from box mix, plan birthday party, have neighborhood
job - such as pet care or yard work, or have a paper route.

Using Tags in Emails

Confused or ignorant?

Hi, I joined just before Christmas. I am retired and am looking for homemade Christmas gifts to make throughout the year. The amount of info is amazing and I really enjoy it. However, I do not know how to use the tags and wallpapers. Are there any special instructions for using these applications. I tried cut and paste & save but not having any luck.

As Im the person who sends most of the pictures I'll try and help you if I
can!

Most of the pictures can be easily saved by right clicking with your mouse and going"save as" and saving to a folder on your computer. Animations have to be saved as gifs. Mostly this happens automatically, I  just say this as I have problems on aol and have to make sure the file type  is gif by changing it myself.

Most email programs have a way of inserting tag (pictures) into the mail they call it embedding it. Often you can use windows explorer to find the picture and simply drag it from there to your mail.

Wallpapers have to be installed as such. go to "start" select "control panel" and then choose "personalisation" One of the choices there is wallpaper and you can select any picture saved on your computer although obviously you need a large one with high resolution or it will look bad!

JANUARY- Planning and your Photos and Digital photo files-so you can get a grip on WHAT you want to do and how much of it you really have time for. Also layout sketches and great sites for those so you can plan.

FEBRUARY- Accents and embellishments- Sort these next so you know what you own and what you have to work with thru the year on the pages and kits you are going to make. Do PURGE the ones you don't really like or don't really need anymore. You need the peace of mind and the space more than you need a bad swap or clearance item from 2001.

MARCH- Paper. Both cardstock and patterned. How to sort it. How to use it in new ways. How to share the pieces you loath from that slab pack... LOL How to get a handle on sorting it all so you can USE it and find it fast.

APRIL- Tool Centers and the tools in them.... Plan your workspace so it WORKS for you.

MAY- Lumpy Embellishments --Oh we all have them! I love mine for all the texture they bring to a page. Let's use them and store them so we can find them! Oh and by the way how many eyelets do YOU need in 2011? *(cough)* How many yards of ribbon/fiber is too much?

JUNE- Page Kits ...Learn the true secret to my success and productivity! How did I make a 98 page 12x12 Germany album, three 12x12 wedding 30 page albums, a 56 page 12x12 childhood album, AND hundreds of other 12x12 pages ALL in 2010????

JULY- Christmas in July -Get planning and moving on those holiday goals BEFORE you have to panic. Look at what you have TONS of and make projects accordingly! We'll show you how.

AUGUST- Journaling It's time to Get er Done. AND do it in fun creative ways!

SEPT - Pages into books month- loose pages get damaged and lost. Get your pages DONE and get them actually sorted into the albums they go into!
