| Make-Ahead Chicken-Chile Rolls 6 boneless, skinless chicken breasts 1/4 lb. Monterey Jack cheese, cut into 6 strips 7-oz. jar diced chiles, divided 1/2 c. dry bread crumbs 1/2 c. grated Parmesan cheese 1 T. chili powder 1/2 t. salt 1/4 t. pepper 1/4 t. ground cumin 1/4 c. plus 2 T. butter, melted 2 c. enchilada sauce Garnish: shredded Mexican-blend cheese, sour cream, diced tomatoes, green onions Flatten chicken breasts to 1/4-inch thin between pieces of wax paper. Top each piece of chicken with one strip of cheese and 2 tablespoons chiles; roll up. Combine bread crumbs, Parmesan cheese and seasonings in a bowl; place melted butter in a separate bowl. Dip chicken rolls in butter and coat in crumb mixture. Arrange chicken rolls in a lightly greased 13"x9" baking pan, seam-side down; drizzle with any remaining butter. Cover and chill overnight. The next day, uncover and bake at 400 degrees for 30 minutes, until heated through. Shortly before serving time, warm enchilada sauce in a saucepan or in the microwave; ladle sauce evenly over chicken. Garnish as desired. Serves 6. ~*~Kaleb's MamaMimi~*~ |

Declutter 101
| FlyLady and Kelly Below is Declutter 101 for those that have never seen it or to refresh your memory: This is how to De-clutter an area of your home. If you are new to de-cluttering then start with a room that you most see the need. This could be your living room, your dining room or your kitchen. Work on the main living areas of your home first. The rooms that you use the most often that are keeping you in CHAOS. (Can't Have Anyone Over Syndrome)You will need garbage bags, 3 boxes, a timer, magic markers, a feather duster or dust rag, and some extra boxes. Label the boxes Give Away, Throw Away, and Put Away. Line the Throw away box with a trash bag so when it is full you can just scoop it up and toss. 1. Set the timer for 1 hour,30, 15, or 10 minutes , I don't care just as long as you do the job as fast as you can and do not pull out more than you can put a way in that length of time. This means one drawer, one closet or even one shelf in the closet, one magazine rack at a time, under the furniture. Not all of them at once. 2. Start at the entrance to the room. Work your way around the room clockwise. Do not skip an area. What ever happens to be next, just take a deep breath and jump in. Remember to not take out more than you can put away during the timer. BabySteps! 3. With boxes at your feet and dust rag or duster handy. Start with throw away box first and get rid of the things that just need to be thrown out. It is amazing how things just accumulate in a space that your really don't love, use or need that is just plain junk or trash. Don't feel guilty just toss. 4. As you work your way through the trash first you will come across things that don't belong in the room this is where you will make decisions to give away or put away. The put away box is where you will place the things that have a home somewhere else in the house or you will need to create a home for them. The give away box is for the things that you no longer love or use but are still nice and in good shape to give away to a donation center such as Goodwill or Salvation Army. Do not donate items that are not in good enough condition to go into someone else's home. If it is trash toss it! 4. When your garbage box, lined with a garbage bag gets full, close it and take it to where you put your garbage. Don't procrastinate and say that you will get to it later. Recycle what you can. Put in a new garbage bag and keep going until the timer goes off. 5. When the give-away box gets full, take it to the car so that the next time you are out you can donate to your area charity donation center. Do not save for a yard sale. You will be blessed by giving it away. The value can be deducted on your income taxes. Remember you are trying to get rid of clutter. Not relocate it somewhere else in your home. Grab another box, label it and get to work. 6. When the put away box gets full, take the box in your arms and run around the house and put the items in the room where they belong. If they have a place, put them there, if not put them in the room where they logically belong. By the time you have finished you will have a place for everything and everything will be in it's place. You will get there 15 minutes at a time with BabySteps. 7. When the timer goes off, You are required to put away all the boxes, but first you have to empty all of them. As fast as you can. 8. Decide how often you are going to de-clutter a section of this room. Make the commitment to yourself to do a little every day. 15 minutes every day will change your life. Let me warn you; this can become compulsive. Once you get started you will want to clean like a banshee. Don't burn yourself out. Only do small amount at a time. When you set the timer you can only do 2 sessions at a time. Trust us you will get your home de-cluttered this way, 15 minutes at a time! 9. Things to ask yourself as you get rid of your clutter. Do you love the item? Is it garbage? Have I used it in a year? Do I have another one that is better? Does it have sentimental value that causes me to love it? Or does it give you guilt and make you sad when you see the item? Cleanse the rooms of everything that does not make you SMILE. 10. Sing this song. "Please release me let me go" as sung from the stuff point of view. It needs to be loved by someone and if you don't love it. GET RID OF IT! 11. Be proud of your accomplishment! Do not look at the room and see all that you have left to do. Look at the room and see how much you did do. The house did not get messy overnight and it will not get clean overnight. Cinnamon Candy Popcorn
| Cinnamon Candy Popcorn 8 quarts popped popcorn 1 cup butter 1/2 cup light corn syrup 1 pkg (9 oz) red hot candies Place popcorn in a large bowl & set aside. In a saucepan, butter, corn syrup & candies; bring to a boil over med-high heat stirring constantly. Boil for 5 minutes minutes stirring occasionally. Pour over popcorn & mix thoroughly. Turn into two greased 15"x10"x1" inch baking pans. Bake at 250F for 1 hour stirring every 15 minutes. Remove from pans & place on wax paper to cool. | Lemonade Sugar Cookies 1 cup sugar 1 cup butter 2 eggs 3 cups sifted all-purpose flour 1 teaspoon baking soda 1 can (6 ounces) frozen lemonade concentrate, thawed extra Sugar (not confectioners) Cream sugar and butter. Add eggs and beat until light and fluffy. Sift flour and soda together. Add alternately with 1/2 cup lemonade concentrate. Drop by teaspoonfuls, 2 inches apart, onto an ungreased baking sheet. Bake in a preheated 400 degree oven for 8 minutes or until lightly browned edges. Brush hot cookies with remaining lemonade and sprinkle with sugar. Using Tags in Emails
Confused or ignorant?Hi, I joined just before Christmas. I am retired and am looking for homemade Christmas gifts to make throughout the year. The amount of info is amazing and I really enjoy it. However, I do not know how to use the tags and wallpapers. Are there any special instructions for using these applications. I tried cut and paste & save but not having any luck. Hi,As Im the person who sends most of the pictures I'll try and help you if I can! Most of the pictures can be easily saved by right clicking with your mouse and going"save as" and saving to a folder on your computer. Animations have to be saved as gifs. Mostly this happens automatically, I just say this as I have problems on aol and have to make sure the file type is gif by changing it myself. Most email programs have a way of inserting tag (pictures) into the mail they call it embedding it. Often you can use windows explorer to find the picture and simply drag it from there to your mail. Wallpapers have to be installed as such. go to "start" select "control panel" and then choose "personalisation" One of the choices there is wallpaper and you can select any picture saved on your computer although obviously you need a large one with high resolution or it will look bad!

Chocolate Sugar Cookies
Chocolate Sugar Cookies Yield: About 2 dozen cookies 2 egg whites, slightly beaten 1/4 cup butter or margarine, melted 1 tablespoon water 1 teaspoon vanilla extract 1 1/3 cups all-purpose flour 3/4 cup plus 1/4 cup sugar, divided 1/3 cup cocoa 1 1/2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt Peanut butter glaze (see note) 1. Heat oven to 350F. Lightly coat cookie sheet with vegetable cooking spray. 2. Lightly beat egg whites; stir in butter, water and vanilla. Stir together flour, 3/4 cup sugar, cocoa, baking powder, baking soda and salt; stir into egg white mixture. Shape into 1-inch balls. Roll in remaining 1/4 cup sugar. Place 2 inches apart on cookie sheet; press balls flat. Bake 6-8 minutes. Cool 5 minutes. Remove from cookie sheet to wire rack. Cool completely. Drizzle with peanut butter glaze. Peanut butter glaze: In a microwave-safe bowl, put 1/2 cup peanut butter chips and 1 teaspoon shortening (do not use butter, margarine or oil). Stuffed Peppers
#100 "Grandma's Wartime Kitchen: World War II and the Way We Cooked" by Joanne Lamb Hayes 5: Meat And Morality VINTAGE RECIPE: "Stuffed Peppers" "This recipe can be adapted to meet the needs of any time period. Here, a very little bit of ground beef flavors a savory rice and vegetable filling." 4 medium bell peppers, either red or green 1 tablespoon vegetable shortening OR butter (OR a mixture) 1/4 pound ground beef 1/2 cup chopped onion 1/2 cup long-grain white rice 1 cup water 1/2 cup fresh or frozen green peas 1/4 cup grated carrot 1/2 teaspoon dried basil leaves 1/4 to 1/2 teaspoon salt 1/4 teaspoon ground black pepper 2 tablespoons grated Cheddar cheese 1. Bring 4" water to a boil in a large saucepan. Trim a 1" slice from the top of each pepper. Discard stems; finely chop tops and set aside. Discard ribs and seeds from bottoms of pepper. Place peppers into boiling water; cook 5 minutes. Remove peppers to colander and drain upside down until filling is prepared. 2. Preheat oven to 375 degrees F. Melt shortening in a large skillet over medium heat. Add ground beef, onion, and chopped pepper tops; saute, stirring until beef has browned. Add rice, 1 cup water, fresh peas (if using frozen peas add them after rice is cooked), carrot, basil, 1/4 teaspoon salt and black pepper. Bring mixture to a boil, reduce heat to low, and cook, covered, 15 to 18 minutes or until rice is tender and all liquid has been absorbed. Taste and add additional salt, if necessary. 3. Set peppers uprigh in a souffle dish or deep baking pan. Divide filling amond peppers; sprinkle with cheese. Bake 15 to 20 minutes or until cheese has melted. 4 Servings. ~*~Kaleb's GranMimi~*~ |

CHRISTMAS COCONUT CAKE
| CHRISTMAS COCONUT CAKE 1 package butter cake mix with pudding -- (18 oz.) 1 can sweetened condensed milk -- (14 oz.) 1 can cream of coconut -- (8 1/2 oz.) 1 can crushed pineapple -- (15 1/4 oz.) 1 carton whipped topping -- (12 oz.) thawed 1 package coconut -- (12 oz.) 1 jar maraschino cherries -- (10 oz.) 1 package crushed pecans Grease and flour bottom only of 13 x 9-inch pan. Set aside. Prepare and bake cake mix according to package directions. Punch holes in top of warm cake with small knife. Combine condensed milk and cream of coconut, pour over warm cake; let cool. Spread pineapple over cake. Top with whipped topping. Sprinkle coconut on cake. Decorate with cherries and pecans. Cover and chill at least 8 hours. Cut into squares and serve. Keep in refrigerator.
